Avocado toast with egg is a simple, yet filling and nourishing meal that works well for breakfast or lunch. Prepare the eggs the way you prefer. Here, they are fried until crisp with a soft yolk.

Directions

Toast the sourdough bread in a toaster or oven until golden and crisp.

Peel and slice the avocado. Place it on the toasted bread and gently press it down with a fork. Season with salt and pepper.

Heat olive oil in a frying pan over medium-high heat. Add the eggs and fry until the whites are set and the yolks are still slightly soft. Season lightly with salt and pepper.
