Brownies are a classic American chocolate cake with a crackled top and a soft, fudgy center. This version is rich and moist, and tastes especially good served with a cold glass of milk.

Ingredients

1 portion

  • 175gmilk chocolate (40%)
  • 75gdark chocolate (70%)
  • 1shotespresso or strong coffee, optional
  • 250gbutter
  • 500gsugar
  • 4eggs
  • 225gall-purpose flour
  • 1tbspvanilla sugar
  • 75gwalnuts, chopped

Directions

Preheat the oven to 180°C / 350°F and line a baking pan (about 25 × 35 cm) with parchment paper.

Melt the butter in a saucepan over low heat. Remove from the heat and add the chocolate and coffee. Stir until smooth. Set aside to cool slightly

Whisk sugar and eggs until light and pale. Use a hand mixer or kitchen machine.

Stir the chocolate mixture into the eggs.

Add flour and vanilla sugar and mix gently until just combined. Do not overmix.

Fold in the walnuts, if using.

Pour the batter into the pan and bake for 30–35 minutes. The edges should be set, while the middle is still soft.

Let the brownies cool then place in the fridge to fully set before cutting and serving.
