
Chili con carne

Ingredients
- 400gground beef
- 1onion
- 2garlic cloves
- 1tbsptomato paste
- 1candiced tomatoes
- 1canblack beans, drained and rinsed
- 1red bell pepper
- 1green bell pepper
- 1chicken bouillon cube
- 250mlwater
- 3tbsptaco seasoning, or to taste
- 1red chili, optional
- 2tbspcooking oil
Optional toppings:
- avocado
- sour cream
- shredded cheese
- fresh cilantro
Directions
Peel and finely dice the onion and garlic. Remove seeds from the chili and finely dice it, if using. Cut the bell peppers into small cubes.
Heat a large pan or pot over medium-high heat. Add the ground beef and cook until well browned and slightly crispy. Remove the meat from the pan and set aside.
Add the onion to the pan and cook until soft. Stir in garlic, tomato paste, and taco seasoning. Cook for about 2 minutes.
Return the meat to the pan. Add diced tomatoes, black beans, bell peppers, bouillon cube, and water. Stir well.
Bring to a gentle simmer. Cover with a lid and let cook for at least 20 minutes. Stir occasionally. Adjust seasoning and add more water if needed.

This dish is great to serve as is, but can also be served with a side of cooked white rice, fresh salad or some whole wheat mini-baguettes.
