Ingredients
1 portion
- 1dlsugar
- 1/2dlwhite vinegar, 5-7%
- 1 1/2dlwater
- 1red onion, large
- 1/4tsppeppercorns, optional
Directions
Slice the red onion into thin slices. Use a mandoline, if you have one, for even slices.
Combine sugar, vinegar, water, and peppercorns in a small saucepan. Bring to a boil and stir until the sugar has dissolved.
Add the sliced onion to the hot liquid. Bring back to a boil, then remove from the heat and leave to cool to room temperature.
Transfer to a clean jar, cover with a lid and place in the refrigerator.
The onions are ready to use once cooled, but develop more flavor after a few hours.

Use pickled red onions as a topping for tacos, burgers, salads, sandwiches, and avocado toast. They also work well as a fresh contrast to rich or fatty dishes.
