Red lentil dal, also known as Indian daal, is a warm and comforting lentil stew full of aromatic spices and rich flavors. This might just become your new favorite vegetarian dinner!

Ingredients

  • 1onion
  • 4clovesgarlic
  • 2tbspginger, grated
  • 2tbspoil
  • 1tbsptumeric
  • 1tbspgaram masala
  • 2tspcumin
  • 1tspchili powder
  • 1bouillon cube
  • 2cansred lentils
  • 1candiced tomatoes
  • 1cancoconut milk
  • 5dlwater
  • 1tspsalt
  • 1/4tsppepper
  • 1/2lemon, juice
  • 4tbspplain yogurt, for topping
  • cilantro, for topping

Directions

1.

Finely dice the onion, garlic, and ginger. Heat the oil in a large pot over medium-high heat and cook until soft and fragrant.

Add the spices and bouillon and cook for another minute, stirring well.

Add lentils, diced tomatoes, coconut milk, and water. Bring to a boil, then lower the heat and let simmer with the lid on for about 30 minutes.

Taste and season with lemon juice, salt, and pepper.

5.

Top the dal with a dollop of yoghurt and freshly chopped cilantro.
